A few weeks before Christmas in 2008 I was diagnosed with a severe gluten intolerance and wheat allergy. The news was heart breaking to say the least. I would have to spend Christmas with my family while trying to learn about and avoid the things that have kept me in a constant state of sickness for most of my adult life. I can remember sitting at the dinner table thinking that “Yes, I can eat this…but at what cost?” That was the most difficult thing that I have had to endure in quite some time. I came to a crossroads that late December, thinking that I only had two ways of looking at this dilemma. I could either stop being a foodie, which wasn’t going to happen, or I could use my culinary knowledge to overcome this obstacle in my path. I have chosen the latter.I am not a genius, nor some visionary. The simple truth of the matter is that more than anything I love to eat good food.
My goal is to create recipes that are not recognizably gluten-free. All of our gluten-free recipes are taste tested by people who do not suffer from Celiac disease or a gluten intolerance to insure proper taste, texture and character.
We pride ourselves in being the only catering company in the Greater Columbia area to provide comprehensive gluten-free services. We can now make almost any item on our expansive menus gluten-free.
